Scrumptious Scramble

What you need:

drizzle of Tuscan Olive Oil (375 ml) Oliveto Ranch (for pan)

4 Fresh Eggs (1 dozen) JCVBC Egg Farms

2 Yukon Golden Potato from Chavez Farms

1/4 Fresh Shallot (1 plant) Pepper Creek Family Farms

1 bunch of Spinach (1 bunch) Domingo Farms

1 Beef Tomato Cal Poly Fruit Science

1 handful (sliced or grated) of Pepper Jack Cow Cheese Vintage Cheese Company

1/2 Zutano Avocado Righetti Avocado Ranch

Instructions:

1. Heat a drizzle of olive oil in a medium sized pan

2. Dice onion and add 1/4 of it to the hot pan

3. Cube potatoes and add to pan

4. Cover pan and cook on low until potatoes are soft

5. Add rinsed spinach and cover until wilted

6. Whisk eggs and pour into pan

7. Stir and scrape with a spatula as the eggs cook

8. Add tomatoes and cheese

9. Remove from heat and plate

10. Garnish with avocado and cilantro

5 Minute Summer Slaw 

Here is all you need for this recipe...

Cabbage (1 head) Cal Poly Organic Farm

Sweet Carrots (1 bunch) Pepper Creek Family Farms

Green Onions (1 bunch) Cal Poly Organic Farm

handful of Fresh Cilantro

handful Raw Almonds

Spicy Peanut Vinaigrette Trader Joes (or really any dressing you have on hand!)

     To make your own sauce:

      -2 tbsp of peanut butter

      -2 garlic cloves

      -1 tbsp soy sauce

      -1 tbsp of honey (add more for sweeter sauce)

      -1 tsp of fresh grated ginger

      -pinch of salt

      -2 tsp fresh lime juice

      -1 tsp of rice vinegar

      -3 tbsp of oil of choice (I used avocado oil!)

      -1 tsp of red pepper flakes

      -one handful of fresh cilantro

     put all ingredients in blender or food processor and pulse until smooth

And now to make the slaw:

1) shred cabbage and bunch of carrots

2) chop green onions and cilantro

3) slice almonds and toast in a pan until they are a light golden color

4) mix in any other veggies you have! Some suggestions: red bell peppers, sugar snap peas, edamame, cucumbers

5) toss all ingredients in the peanut sauce dressing

6) chill in fridge or enjoy immediately!

* for some added protein, throw in some cooked chicken or tofu!
